Easy Moist Brownies

by - Thursday, May 15, 2014

Brownies are probably my most-baked dessert because they are so easy to whip up with just a few ingredients that are usually in our kitchen already. I have been searching for the best easy yet satisfying brownies and have tried and tested recipes from the internet, made a few adjustments to my preference, and finally created my own recipe.

I think every household should have their own staple brownie recipe because it is perfect for all ocassions! Birthdays, anniversaries, snacks, trip to the beach, meetings, or giveaways! I made these brownies for Andy and his coworkers for their lunch meeting, and they loved it. Nobody can't resist chocolate brownies, I'm sure of that.

You can easily make these brownies without having the hassle of melting (and spending money to buy) chocolate bars. All you need are the basic ingredients which should always be present in your kitchen if you're always baking (flour, baking powder/soda, butter, eggs, vanilla extract). For the chocolate flavor of the brownies, you need some cocoa powder. You can find cocoa powder in supermarkets easy. Be sure to buy cocoa powder for baking, not the powder we use for drinking. So here is the recipe.
  • 1/2 cup all-purpose flour
  • 1/2 cup butter, melted
  • 1 cup granulated white sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 eggs
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 tbs vegetable oil
  • 1 tsp vanilla extract
Directions:
1. Preheat oven to 350 degrees F (or 190 degrees C).
2. Grease an 8x8 or 9x9 baking pan with butter or oil (but you can use any size near to that, I sometimes use 8x10) and place parchment/wax/glassline paper on the baking pan up to the sides so the batter does not stick.
3. Melt butter in a saucepan. Add in the sugar and cocoa powder and mix. Add in eggs, vanilla extract, and oil. Mix altogether.
4. In another bowl, mix the dry ingredients together - flour, baking powder, and salt. Mix gently to the wet batter. If it is all mixed in and you can no longer see the flour, stop mixing. Do not overmix.
5. Place the batter in the prepared pan and spread evenly. Bake in the preheated oven for 25-30 minutes. Check by inserting a toothpick in the center and if it comes out with little crumbs (not wet batter), they are done. DO NOT OVERBAKE or they will turn out cakey, not moist.
6. Remove and let it cool completely before slicing. (I don't usually have the patience for this but it's always better to slice them when they have cooled a little to have clean slices)

Makes 12 servings, depending on how big or small you slice them. You can top it with icecream, chopped peanuts, chocolate, or powdered sugar like what I did. Serve and enjoy!
